FALCONRY
Most falconry displays these days involve an arena display with a  number of birds being flown, often free and returning to the falconer.  Apart from the flying displays, there would be a static display of the various birds and the falconer would talk about his birds.  Many falconers allow members of the public to hold the birds for photographs, particularly at weddings.  Occasionally, a falconer may arrange for a bird (usually and owl) to fly the wedding ring to the groom during the ceremony.

“An eagle for an Emperor, a gyrfalcon for a King, a peregrine for a prince, a saker for a knight,
a Merlin for a Lady, a goshawk for a yeoman, a sparrowhawk for a priest, a musket for a holy water clerk, a kestrel for a knave.”
(The Boke of St Albans, c. 1486)
